These crispy Zucchini Fritters with Garlic Aioli are the perfect blend of crunch and creaminess. Easy to make, packed with flavor, and ideal for appetizers, snacking, or light meals.
Grate the zucchini and toss with salt. Let sit for 10 minutes.
Squeeze out as much liquid as possible using a towel or cheesecloth.
In a bowl, combine zucchini, egg, flour, Parmesan, garlic, pepper, baking powder, and parsley. Mix well.
Heat a thin layer of olive oil in a skillet over medium heat.
Scoop batter into the skillet and flatten slightly. Cook 2–3 minutes per side until golden brown.
For the garlic aioli, mix mayo, garlic, lemon juice, salt, and pepper in a bowl until smooth.
