For the Fritters:
- 2 medium zucchinis grated
- 1 tsp salt
- 1 large egg
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic minced
- 1/4 tsp black pepper
- 1/4 tsp baking powder
- 2 tbsp chopped parsley optional
- Olive oil for frying
For the Garlic Aioli:
- 1/4 cup mayonnaise
- 1 clove garlic finely grated
- 1 tsp lemon juice
- Salt and pepper to taste
Grate the zucchini and toss with salt. Let sit for 10 minutes.
Squeeze out as much liquid as possible using a towel or cheesecloth.
In a bowl, combine zucchini, egg, flour, Parmesan, garlic, pepper, baking powder, and parsley. Mix well.
Heat a thin layer of olive oil in a skillet over medium heat.
Scoop batter into the skillet and flatten slightly. Cook 2–3 minutes per side until golden brown.
For the garlic aioli, mix mayo, garlic, lemon juice, salt, and pepper in a bowl until smooth.
Serve the hot fritters with garlic aioli on the side.
Be sure to squeeze out all the moisture from the zucchini for extra crisp fritters.
Add chili flakes to the aioli for a spicy twist.
You can bake the fritters at 400°F (200°C) for 15–20 mins as a lighter option.
