Ingredients
  

Salad

  • 2 cups apples, diced about 2 medium apples, tart or sweet as preferred
  • 1 cup celery, chopped
  • 1 cup seedless grapes, halved red or green
  • 1 cup walnuts, chopped and toasted

Dressing

  • 1/2 cup mayonnaise or half mayo and half plain yogurt for a lighter dressing
  • 1 tbsp lemon juice freshly squeezed
  • 1/4 tsp salt or to taste

Instructions
 

  • Core and dice the apples into bite-sized pieces; toss with a little lemon juice if you want to prevent browning.
  • Thinly slice the celery and halve the seedless grapes. Roughly chop the walnuts and toast them briefly in a dry skillet until fragrant; let cool.
  • In a small bowl, whisk together the mayonnaise, lemon juice and salt until smooth and well combined.
  • Place the apples, celery, grapes and walnuts in a large mixing bowl. Pour the dressing over the mixture and fold gently until everything is evenly coated.
  • Cover and chill the salad for about 30 minutes to let the flavors meld. Taste and adjust seasoning before serving.

Notes

For a lighter version, substitute half of the mayonnaise with plain Greek yogurt; add a touch of honey if you prefer a sweeter dressing.
Store leftovers in an airtight container in the refrigerator for up to 2 days. For best texture, add the nuts just before serving if you want them extra crunchy.
