Ingredients
  

  • 2 cups cannellini beans drained and rinsed
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup vegetable broth
  • 2 tablespoons lemon juice freshly squeezed
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper to taste

Instructions
 

  • In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 2 minutes.
  • Add cannellini beans to the skillet and stir gently to combine. Cook until heated through, around 3–4 minutes.
  • Pour in vegetable broth and lemon juice. Let simmer until slightly thickened, about 5 minutes.
  • Season with salt and pepper to taste, then serve over pasta or rice, garnishing with fresh parsley if desired.
