Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion diced
  • 2 carrots diced
  • 2 celery stalks chopped
  • 3 medium potatoes diced
  • 1 cup green beans chopped
  • 1 cup corn kernels fresh or frozen
  • 1 cup peas fresh or frozen
  • 1 can 14.5 oz diced tomatoes
  • 6 cups vegetable broth
  • 2 cups fresh spinach or kale
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté until softened.
  • Stir in potatoes, green beans, corn, and peas. Cook for 3–4 minutes.
  • Add diced tomatoes, vegetable broth, thyme, and oregano. Bring to a boil.
  • Reduce heat to low and simmer for 25–30 minutes, until vegetables are tender.
  • Stir in spinach or kale. Cook for 2–3 minutes until wilted.
  • Season with salt and black pepper to taste. Serve warm.

Notes

For a thicker soup, mash a few potatoes in the pot.
Swap spinach with kale, chard, or collard greens.
Add cooked beans or lentils for extra protein.
