Ingredients

  • 24 ladyfinger biscuits Savoiardi
  • 1 cup brewed espresso or strong coffee cooled
  • 4 egg yolks
  • ½ cup granulated sugar
  • 1 ¼ cups mascarpone cheese
  • 1 cup heavy whipping cream
  • Unsweetened cocoa powder for dusting

Instructions

  • Brew espresso or strong coffee and let it cool completely.
  • In a bowl, beat egg yolks with sugar until thick and pale.
  • Add mascarpone to the yolk mixture and mix until smooth.
  • Whip the cream in a separate bowl until stiff peaks form.
  • Gently fold whipped cream into the mascarpone mixture.
  • Dip ladyfingers quickly in espresso, then layer in a dish.
  • Spread half of the cream mixture over the ladyfingers.
  • Repeat with another layer of dipped ladyfingers and cream.
  • Cover and refrigerate for at least 6 hours or overnight.
  • Dust generously with cocoa powder before serving.

Notes

For extra flavor, add a splash of coffee liqueur to the espresso. Use decaf coffee to make it kid-friendly. Don’t soak ladyfingers too long—they absorb liquid fast!
