Ingredients
  

  • 1 cup 226g unsalted butter, softened
  • 1 cup 200g granulated sugar
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
  • 2 ½ cups 310g all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Instructions
 

  • In a large bowl, cream butter and sugar until light and fluffy.
  • Beat in egg and vanilla extract until well combined.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture, mixing until a dough forms.
  • Divide dough in half, wrap in plastic, and chill for at least 1 hour.
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Roll dough on a floured surface to ¼-inch thickness. Cut into desired shapes.
  • Place on prepared baking sheets and bake 8–10 minutes, until edges are just golden.
  • Cool completely before decorating with icing or sprinkles.

Notes

Chill dough thoroughly to prevent cookies from spreading.
For extra flavor, add a touch of almond extract or lemon zest.
Cookies can be frozen decorated or undecorated for up to 3 months.
