- 1 lb chicken breast or tofu for a vegetarian option, sliced thin
- 2 tbsp vegetable oil
- 2 garlic cloves minced
- 1 small onion sliced
- 1 bell pepper sliced
- 1 cup broccoli florets
- 1 large carrot julienned
- 2 tbsp soy sauce or tamari for gluten-free
- 1 tbsp oyster sauce optional, or use a vegetarian substitute
- 1 tbsp sesame oil
- 1 tbsp cornstarch optional, for a thicker sauce
- 1/2 tsp ground ginger fresh ginger is also a great option

Prepare the Ingredients:Slice the chicken, vegetables, and garlic. If using tofu, press it to remove excess moisture, then cut it into cubes.
Cook the Chicken or Tofu:Heat the vegetable oil in a large wok or skillet over medium-high heat. Once the oil is hot, add the chicken (or tofu) and cook for about 5-7 minutes, or until cooked through. Remove from the pan and set aside.
Cook the Vegetables:In the same pan, add a little more oil if necessary. Add the garlic and onion, and sauté for about 2 minutes. Add the bell pepper, carrot, and broccoli. Stir fry for another 5 minutes, until the vegetables are tender but still crisp.
Prepare the Sauce:In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, and cornstarch (if using). Pour the sauce over the vegetables in the pan, stirring to coat everything evenly.
Combine Chicken and Vegetables:Return the chicken (or tofu) to the pan and toss to combine. Stir-fry everything together for another 2 minutes, allowing the sauce to thicken.
Serve:Remove from heat. Serve the stir fry over steamed rice or noodles. Garnish with sesame seeds or fresh cilantro for an extra touch.
