Ingredients

  • 1 lb chicken breast or tofu for a vegetarian option, sliced thin
  • 2 tbsp vegetable oil
  • 2 garlic cloves minced
  • 1 small onion sliced
  • 1 bell pepper sliced
  • 1 cup broccoli florets
  • 1 large carrot julienned
  • 2 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp oyster sauce optional, or use a vegetarian substitute
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch optional, for a thicker sauce
  • 1/2 tsp ground ginger fresh ginger is also a great option
  •
  • Salt and pepper to taste

Instructions

  • Prepare the Ingredients:Slice the chicken, vegetables, and garlic. If using tofu, press it to remove excess moisture, then cut it into cubes.
  • Cook the Chicken or Tofu:Heat the vegetable oil in a large wok or skillet over medium-high heat. Once the oil is hot, add the chicken (or tofu) and cook for about 5-7 minutes, or until cooked through. Remove from the pan and set aside.
  • Cook the Vegetables:In the same pan, add a little more oil if necessary. Add the garlic and onion, and sauté for about 2 minutes. Add the bell pepper, carrot, and broccoli. Stir fry for another 5 minutes, until the vegetables are tender but still crisp.
  • Prepare the Sauce:In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, and cornstarch (if using). Pour the sauce over the vegetables in the pan, stirring to coat everything evenly.
  • Combine Chicken and Vegetables:Return the chicken (or tofu) to the pan and toss to combine. Stir-fry everything together for another 2 minutes, allowing the sauce to thicken.
  • Serve:Remove from heat. Serve the stir fry over steamed rice or noodles. Garnish with sesame seeds or fresh cilantro for an extra touch.

Notes

  • For a Spicier Stir Fry: Add chili paste or fresh chilies to the sauce.
  • For a Vegan Option: Replace chicken with tofu or tempeh.

  • To Get the Best Texture: Make sure your pan is very hot before adding the ingredients. This helps give the chicken a nice sear and keeps the veggies crisp.
