Ingredients
  

  • 1 lb ground beef
  • 1 small yellow onion diced
  • 2 garlic cloves minced
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth
  • ¾ cup sour cream or Greek yogurt
  • 1 20 oz package refrigerated cheese tortellini
  • 1 tbsp olive oil or butter
  • Fresh parsley or Parmesan for garnish optional

Instructions
 

  • Heat oil in a large skillet over medium-high heat. Add ground beef and cook until browned. Drain excess fat.
  • Stir in diced onion and garlic. Cook until fragrant and softened, about 3–4 minutes.
  • Add paprika, salt, pepper, and Worcestershire sauce. Stir to combine.
  • Pour in beef broth and bring to a gentle simmer.
  • Add tortellini, stir, cover, and cook for 6–8 minutes until pasta is tender.
  • Reduce heat to low and mix in sour cream. Stir gently until heated through.
  • Garnish with parsley or Parmesan and serve hot.

Notes

For extra creaminess, add ¼ cup cream cheese along with the sour cream.
Make it vegetarian with plant-based beef and mushroom broth.
Store leftovers in the fridge for up to 4 days; reheat with a splash of broth or milk.
