Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • ½ cup water
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 small red bell pepper diced
  • 1 small green bell pepper diced
  • 1 jalapeño fi chopped (optional)nely
  • 2 green onions chopped
  • ¼ cup fresh cilantro chopped
  • ½ cup sour cream
  • 10 –12 egg roll wrappers
  • Vegetable oil for frying
  • Water for sealing

Instructions
 

  • In a skillet, cook ground beef until browned. Drain grease. Add taco seasoning and water. Simmer until thickened, then cool slightly.
  • In a large bowl, combine the beef with cheeses, bell peppers, jalapeño, green onions, cilantro, and sour cream.
  • Lay one egg roll wrapper flat. Add 2–3 tbsp of filling in the center. Fold bottom up, sides in, and roll tightly. Seal edge with water.
  • Heat oil to 350°F (175°C). Fry 3–4 rolls at a time for 3–4 minutes until golden brown and crispy. Drain on paper towels.
  • Serve hot with sour cream, guacamole, or salsa for dipping.

Notes

For a spicier version, add hot sauce or extra jalapeños to the filling.
Air fryer alternative: Brush rolls with oil and cook at 375°F for 8–10 minutes.
Avoid overfilling to prevent tearing while frying.
