Ingredients
  

  • 1 cup cabbage shredded
  • 1 cup carrots shredded
  • 1 pound ground meat chicken or pork
  • 4 cups vegetable broth
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 2 scallions sliced for garnish

Instructions
 

  • In a large pot, heat oil over medium heat and sauté minced garlic and ginger until fragrant, about 1-2 minutes.
  • Add the ground meat, cooking until browned and crumbly, roughly 5 minutes.
  • Stir in shredded cabbage and carrots, cooking just until tender, then pour in the broth.
  • Simmer for 10 minutes, allowing flavors to meld. Serve hot, garnished with green onions.
