Ingredients

  • 1 lb 450g ground beef
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth or water for a lighter version
  • 1 ½ cups shredded cheddar cheese
  • 1 can 10 oz cream of mushroom soup (or use a dairy-free alternative)
  • 1 small onion finely chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish optional
  • Alternatives:
  • Dairy-Free: Use dairy-free cheese and swap the cream of mushroom soup for a dairy-free cream soup or homemade sauce.
  • Gluten-Free: Choose gluten-free broth and check that your cream of mushroom soup is gluten-free.

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  • Cook Beef: In a skillet, cook the ground beef over medium heat, breaking it apart with a spoon until browned. Drain any excess fat.
  • Cook Rice: In a separate pot, cook the rice according to the package instructions, using beef broth for extra flavor.
  • Prepare Casserole Base: In a large bowl, mix the cooked ground beef, rice, chopped onion, garlic powder, cream of mushroom soup, salt, and pepper. Stir well to combine.
  • Assemble Casserole: Transfer the beef and rice mixture to the prepared baking dish. Top with the shredded cheddar cheese, spreading it evenly.
  • Bake: Place the dish in the oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
  • Garnish & Serve: Let the casserole cool for a few minutes before serving. Garnish with chopped parsley if desired.
