Ingredients
  

  • 2 tablespoons olive oil or butter
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 2 celery stalks diced
  • 1 medium head of cabbage chopped
  • 1 can 28 oz diced tomatoes
  • 6 cups vegetable broth or chicken broth
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme or Italian seasoning
  • 2 bay leaves
  • ½ teaspoon red pepper flakes optional, for spice
  • 1 pound ground beef or sausage optional, cooked separately
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Heat olive oil or butter in a large pot.
  • Add onion, garlic, carrots, and celery; sauté until softened.
  • Stir in cabbage and cook for 2–3 minutes to release flavor.
  • Pour in broth and tomatoes; season with salt and pepper.
  • Bring to a boil, then reduce heat and simmer for 25–30 minutes until cabbage is tender.
  • (Optional) Brown ground beef or sausage separately, then stir into soup.
  • Taste, adjust seasoning, and garnish with fresh parsley before serving.

Notes

For extra spice, add red pepper flakes or chili powder.
Can be made vegetarian by using vegetable broth and skipping the meat.
Freezes well for up to 2 months.
