- 1 large onion diced
- 2 carrots sliced
- 3 garlic cloves minced
- 1 can 14 oz diced tomatoes
- 6 cups vegetable or chicken broth
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Heat olive oil in a large pot over medium heat.
Add onions, carrots, and garlic; sauté until fragrant (about 5 minutes).
