Ingredients
  

  • 1 medium head of cabbage chopped
  • 1 large onion diced
  • 2 carrots sliced
  • 3 garlic cloves minced
  • 1 can 14 oz diced tomatoes
  • 6 cups vegetable or chicken broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onions, carrots, and garlic; sauté until fragrant (about 5 minutes).
  • Stir in diced tomatoes, broth, thyme, paprika, salt, and pepper.
  • Add chopped cabbage and bring the soup to a boil.
  • Reduce heat to low and simmer for 25–30 minutes, until cabbage is tender.
  • Taste and adjust seasoning as needed.
  • Serve hot, garnished with fresh parsley.

Notes

For extra flavor, add a bay leaf while simmering.
Swap vegetable broth for chicken broth for a richer taste.
Great served with crusty bread or a side salad.
