Ingredients
  

  • 1/4 cup fresh lemon juice
  • 2 tablespoons avocado oil
  • 2 cloves garlic minced
  • 2 teaspoons dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 (6-ounce) pieces chicken breasts boneless, skinless
  • 1 1/2 pounds baby potatoes cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt plus more to taste
  • 1 teaspoon black pepper plus more to taste
  • 4 small zucchinis sliced in 1-inch pieces

Instructions
 

  • Whisk lemon juice, avocado oil, minced garlic, oregano, paprika, salt, and pepper in a bowl. Coat chicken evenly and let it marinate up to 24 hours.
  • Heat oven to 400ºF. Toss potatoes with oil, garlic powder, salt, and pepper on a sheet pan. Roast for 30 minutes until golden, stirring midway.
  • Heat a skillet over medium-high heat. Cook marinated chicken for 7-8 minutes each side, until golden and cooked through.
  • Mix zucchini in reserved marinade. In same skillet, cook zucchini over high heat until tender, about 5-7 minutes.
  • Arrange sliced chicken, zucchini, and potatoes in meal prep containers. Enjoy convenient meals throughout the week!
