Ingredients
  

  • 1 cup cashews soaked for at least 2 hours
  • 2 cups cherry tomatoes roasted
  • 4 cloves garlic roasted
  • 1 cup spinach fresh
  • 8 oz pasta of choice
  • 1 tbsp olive oil for roasting

Instructions
 

  • Soak 1 cup of cashews in water for at least 2 hours.
  • Preheat your oven to 400°F (200°C). Spread chopped cherry tomatoes and whole garlic cloves on a baking sheet, drizzling with olive oil, and roast for about 25 minutes.
  • In a blender, combine soaked cashews, roasted tomatoes, garlic, and a handful of spinach. Blend until smooth and creamy.
  • Cook your favorite pasta according to package instructions. Toss with the pink sauce, adding optional pasta water to reach desired consistency, and serve hot.
