Ultimate Cheesy Scalloped Potatoes

This is my favorite side dish for gatherings! Layered with creamy, cheesy goodness, these scalloped potatoes bring a delightful mix of flavors with savory herbs and melty cheese that everyone will love.

Ingredients
  

  • 3 lbs potatoes Yukon gold or russet
  • 1/4 cup avocado oil
  • 1 large onion diced small
  • 4 garlic cloves minced
  • 1 1/2 to 2 teaspoons fresh rosemary chopped
  • 1 1/2 to 2 teaspoons fresh thyme or dried
  • 1/4 cup all-purpose flour or white whole wheat pastry flour
  • 1 cup milk
  • 1 1/2 cups vegetable broth
  • 1/4 teaspoon salt & black pepper
  • 1 1/2 cups sharp cheddar cheese shredded (divided)
  • 1 1/2 cups Gruyere cheese shredded

Instructions
 

  • Preheat your oven to 350°F. As you wait, the kitchen will soon fill with warmth.
  • In a medium saucepan, heat the avocado oil and sauté the diced onions until they turn translucent, about 3-4 minutes. Add minced garlic and fresh herbs, stirring for another minute until fragrant.
  • Whisk in the flour along with the aromatics. Gradually add the milk and vegetable broth, whisking to combine. Stir in 3/4 cup of cheddar cheese and season with salt and pepper. Allow the sauce to gently simmer until it thickens, roughly 2-3 minutes.
  • Slice the potatoes evenly into 1/8-inch thick pieces using a mandoline or a sharp knife.
  • Grease a 9x13 baking dish and layer the bottom with potato slices. Sprinkle each layer with a slight touch of salt and black pepper, spreading about 1/3 of the sauce over them, and top with cheddar and Gruyere cheese. Repeat until finishing with a last layer of cheese.
  • Cover with foil and bake for 60 minutes. Remove the foil, letting it bake for an additional 30 minutes until the top is golden and bubbling. Once out of the oven, allow it to sit for 10 minutes to let the flavors settle before serving.
