Ingredients
  

  • 1 cup Swiss chard chopped
  • 1 cup eggs beaten
  • 1 cup onion diced
  • 1 cup cheese crumbled feta or goat cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon pepper adjust to taste

Instructions
 

  • In a skillet, heat olive oil over medium heat.
  • Add the diced onion and sauté until translucent, about 4 minutes.
  • Stir in the chopped Swiss chard and cook until wilted, about 3-5 minutes.
  • In a bowl, whisk together the beaten eggs, salt, and pepper.
  • Pour the egg mixture over the vegetables in the skillet.
  • Sprinkle cheese on top and cook for another 5-7 minutes, until the edges are set.
  • Serve warm, slicing into wedges.

Notes

Best enjoyed fresh but can be stored in the fridge for up to 3 days.
