Ingredients
  

  • 4 ears fresh corn or 4 cups frozen kernels, thawed
  • 3 tbsp mayonnaise or sour cream
  • 1 tbsp lime juice freshly squeezed
  • 1/2 tsp chili powder or paprika
  • 1/3 cup cotija cheese crumbled, or feta as substitute
  • 2 tbsp fresh cilantro chopped
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste

Instructions
 

  • Cook the corn: Grill, roast, or boil the corn until tender. If using frozen corn, sauté in a skillet until warmed through.
  • Cut kernels: If on the cob, carefully cut kernels off and place them in a large bowl.
  • Make the sauce: In a small bowl, mix mayonnaise, lime juice, chili powder, salt, and pepper.
  • Combine: Toss the warm corn with the sauce until evenly coated.
  • Add toppings: Sprinkle cotija cheese and chopped cilantro on top.
  • Serve: Garnish with extra lime wedges and enjoy immediately.

Notes

For extra smoky flavor, char the corn on the grill or under the broiler.
Adjust spice level by adding cayenne or hot sauce.
Swap cotija for parmesan or feta if unavailable.
For a lighter version, use Greek yogurt instead of mayo.
