Ingredients
  

  • 8 oz rotini or fusilli pasta
  • 1 ½ cups fresh strawberries hulled and sliced
  • ½ cup sour cream or plain Greek yogurt
  • 2 –3 tbsp sugar adjust to taste
  • 1 tsp vanilla extract optional
  • A pinch of salt

Instructions
 

  • Cook the pasta in salted boiling water until al dente. Drain and let cool slightly.
  • Mash 1 cup of strawberries with sugar until juicy.
  • Stir in sour cream (or yogurt) and vanilla extract to create a creamy sauce.
  • Toss the slightly cooled pasta with the strawberry cream sauce.
  • Top with the remaining sliced strawberries. Serve warm or chilled.

Notes

You can blend strawberries for a smoother sauce.
For a sweeter dessert, add a drizzle of honey.
Works great with plant-based yogurt for a vegan option.
