- 8 oz rotini or fusilli pasta
- 1 ½ cups fresh strawberries hulled and sliced
- ½ cup sour cream or plain Greek yogurt
- 2 –3 tbsp sugar adjust to taste
- 1 tsp vanilla extract optional
- A pinch of salt
Cook the pasta in salted boiling water until al dente. Drain and let cool slightly.
Mash 1 cup of strawberries with sugar until juicy.
Stir in sour cream (or yogurt) and vanilla extract to create a creamy sauce.
Toss the slightly cooled pasta with the strawberry cream sauce.
