Bright, tender sugar cookies infused with fresh lime zest and juice. Ready in under 30 minutes, these soft-bite rounds are rolled in sparkling lime sugar for a fragrant finish.
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a bowl, cream ½ cup softened butter and ¾ cup sugar on medium speed for about 3 minutes until pale and airy.
Beat in lime zest, egg, lime juice, and vanilla until smooth and glossy.
Whisk flour, baking powder, and salt together. Gradually mix into the wet ingredients until just combined.
Stir zest into ¼ cup sugar in a small bowl. Roll dough into 2-Tbsp balls, coat in lime sugar, and place 2 inches apart on the sheet.
Bake 9–11 minutes until edges are set and bottoms are lightly golden. Let rest on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For ultra-soft centers, pull cookies at 9 minutes and let carryover heat finish baking on the pan.Rotate the pan halfway through baking to avoid hot spots and ensure even browning.
