  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 large egg room temperature
  • 1 Tbsp fresh lime juice
  • 1 tsp vanilla extract
  • 1.25 cup all-purpose flour spooned and leveled
  • 0.5 tsp baking powder
  • 0.125 tsp salt

Coating

  • 0.25 cup granulated sugar
  • 1 lime zest

Instructions
 

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • In a bowl, cream ½ cup softened butter and ¾ cup sugar on medium speed for about 3 minutes until pale and airy.
  • Beat in lime zest, egg, lime juice, and vanilla until smooth and glossy.
  • Whisk flour, baking powder, and salt together. Gradually mix into the wet ingredients until just combined.
  • Stir zest into ¼ cup sugar in a small bowl. Roll dough into 2-Tbsp balls, coat in lime sugar, and place 2 inches apart on the sheet.
  • Bake 9–11 minutes until edges are set and bottoms are lightly golden. Let rest on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For ultra-soft centers, pull cookies at 9 minutes and let carryover heat finish baking on the pan.
Rotate the pan halfway through baking to avoid hot spots and ensure even browning.
