Ingredients
  

  • - 1 cup unsalted butter softened
  • - 1 1/2 cups granulated sugar
  • - 2 large eggs
  • - 2 3/4 cups all-purpose flour
  • - 2 teaspoons cream of tartar
  • - 1 teaspoon baking soda
  • - 1/4 teaspoon salt
  • - 3 tablespoons granulated sugar for coating
  • - 1 tablespoon ground cinnamon for coating

Instructions
 

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a large bowl, cream butter and 1 1/2 cups sugar until light and fluffy.
  • Beat in the eggs one at a time.
  • In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
  • Gradually mix dry ingredients into the butter mixture until fully combined.
  • In a small bowl, mix 3 tablespoons sugar and cinnamon.
  • Shape dough into 1-inch balls and roll in the cinnamon sugar mixture.
  • Place on prepared baking sheets 2 inches apart.
  • Bake for 8–10 minutes until set but soft. Do not overbake.
  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. These freeze well both baked and unbaked.
