Ingredients
  

  • 1 lb ground beef 80/20 blend, about 4 balls of 4 oz each
  • 4 slices cheddar or American cheese
  • 4 brioche buns
  • 1 large onion thinly sliced and caramelized
  • 1 cup arugula or lettuce
  • 2 tbsp butter for toasting buns
  • 1 tsp salt
  • ½ tsp black pepper

Instructions
 

  • Preheat a cast-iron skillet or griddle until very hot.
  • Roll beef into 3–4 oz balls.
  • Place beef balls on the skillet and smash flat with a spatula.
  • Season with salt and pepper.
  • Cook 2–3 minutes until edges are crispy.
  • Flip, then top with cheese slices to melt.
  • Butter and toast brioche buns on the skillet.
  • Assemble: bun, patty, cheese, caramelized onions, greens, and sauce of choice.

Notes

Use parchment paper between spatula and beef for easier smashing.
Double up patties for a diner-style burger.
Swap cheese for brie, Swiss, or blue cheese for variety.
