1lbground beef80/20 blend, about 4 balls of 4 oz each
4slicescheddar or American cheese
4brioche buns
1large onionthinly sliced and caramelized
1cuparugula or lettuce
2tbspbutterfor toasting buns

Instructions
Preheat a cast-iron skillet or griddle until very hot.
Roll beef into 3–4 oz balls.
Place beef balls on the skillet and smash flat with a spatula.
