Ingredients
  

  • 6 bone-in skin-on chicken thighs
  • ½ cup brown sugar
  • 5 cloves garlic minced
  • ½ cup low-sodium soy sauce
  • cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon dried Italian herbs optional
  • 1 tablespoon cornstarch + 2 tablespoons water optional, for thickening
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Pat chicken thighs dry with paper towels.
  • In a small bowl, mix brown sugar, garlic, soy sauce, chicken broth, olive oil, pepper, and herbs.
  • Place chicken thighs in the slow cooker and pour sauce over them.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is fully cooked and tender.
  • (Optional) Remove chicken, whisk cornstarch with water, stir into sauce, and cook for 15 minutes to thicken.
  • Return chicken to sauce, spoon over to coat, and garnish with parsley.
  • Serve hot with rice, potatoes, or veggies.

Notes

For extra caramelization, broil chicken for 2–3 minutes after slow cooking.
Chicken breasts can be substituted, but thighs remain juicier.
Adjust sweetness by reducing brown sugar slightly if preferred.
