Ingredients
  

  • 1 pound ground beef
  • 1 cup onion diced
  • 1 tablespoon garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 5 medium potatoes thinly sliced
  • 1 can condensed cream of mushroom soup (10.7 oz)
  • 1 can condensed cream of chicken soup (10.7 oz)
  • 1 can evaporated milk (12 oz)
  • 1/2 cup milk
  • 2 cups shredded cheese
  • 1 avocado oil for cooking
  • 1 teaspoon smoked paprika
  • 1 cooking spray

Instructions
 

  • Preheat your oven to 375°F. Coat a 9x13 inch baking dish generously with cooking spray.
  • In a large skillet, heat avocado oil over medium. Sauté the ground beef, onions, and garlic until the beef is browned and onions are tender. Drain the fat, then season with salt, pepper, and smoked paprika.
  • Layer half of the thinly sliced potatoes in the prepared baking dish. Spread half the beef mixture over the potatoes.
  • Whisk together the mushroom soup, chicken soup, milk, and evaporated milk in a bowl until smooth. Pour half over the beef and potatoes, then sprinkle with half of the shredded cheese.
  • Repeat the layers with the remaining potatoes, beef mixture, soup mixture, and cheese.
  • Cover the baking dish with tinfoil, ensuring it is tented to avoid contact with the cheese. Bake in the preheated oven for 1 hour. Remove foil and bake for an additional 30 minutes to achieve a golden, bubbly top.
  • Allow the casserole to cool for 10 minutes before slicing and serving. This wait time helps the casserole set and develop its flavors.
