  • 1 cup butter for sautéing
  • 1 cup shallots finely chopped
  • 2 cloves garlic minced
  • 16 oz shrimp peeled and deveined
  • 4 cups seafood stock low-sodium preferred
  • 1 cup heavy cream adds richness

Cooking Steps

  • Melt butter in a pot over medium heat, add finely chopped shallots and garlic. Sauté until fragrant, about 3 minutes.

  • Add the shrimp and cook until they turn pink, about 2 to 3 minutes.

  • Pour in the seafood stock and let it simmer for 10 minutes.

  • Stir in the heavy cream and blend using an immersion blender until smooth.

Notes

Store in the fridge for up to 3 days. Freezes well for 2 months; just note that cream can separate upon thawing.
