Ingredients
  

  • 1 lb ground turkey
  • 3 cups mashed potatoes
  • 1 cup diced mixed vegetables
  • 1/2 onion finely chopped
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 cup shredded mozzarella cheese
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Preheat your oven to 375°F, giving it time to heat evenly, and grease a 9-inch baking dish to ensure easy serving later.
  • In a large skillet over medium heat, cook the ground turkey with the diced onion, allowing the meat to brown and the onion to soften, releasing their rich aromas.
  • After draining any excess grease, stir in the tomato paste, beef broth, soy sauce, mixed vegetables, salt, and pepper. Let it simmer gently for about 5 to 7 minutes, until the mixture thickens slightly, filling your kitchen with an inviting aroma.
  • Spread the flavorful beef mixture evenly into the greased baking dish. Gently layer the mashed potatoes over the top, spreading smoothly, and sprinkle with mozzarella cheese.
  • Bake in the preheated oven for 25 to 30 minutes. You'll know it's ready when the cheese is golden brown and the filling is bubbling with excitement. Let it rest for a few minutes, then garnish with a touch of fresh thyme if desired, and serve hot.

Notes

Consider adding a pinch of thyme for an aromatic twist. For a heartier meal, extra cheese or additional veggies like peas and carrots can easily be included to boost flavor and texture.
