Ingredients
  

  • 2 lb chicken thighs boneless, skinless
  • 1/2 cup soy sauce
  • 2 mangos peeled, pitted
  • 3 cloves garlic minced
  • 1/2 tsp fresh ginger grated
  • 2 tbsp water or more as needed
  • 1/4 tsp cayenne pepper optional
  • cilantro chopped for garnish

Instructions
 

  • Place chicken thighs in a large resealable bag; set aside for marinating.
  • Blend soy sauce, mangos, garlic, ginger, water, and cayenne pepper into a smooth paste.
  • Reserve a quarter-cup of this aromatic mixture; pour the rest over the chicken. Seal and chill for 2 to 8 hours to infuse flavors.
  • Preheat your grill to a sizzling 400°F. Remove chicken, shaking off excess marinade for even grilling. Grill each side for 6-7 minutes until grill marks appear.
  • Transfer the cooked chicken to a serving plate. Brush with the reserved marinade and garnish with freshly chopped cilantro before serving.
