Ingredients
  

  • 1 pound 450 g breakfast sausage
  • 1/3 cup 40 g all-purpose flour
  • 3 –4 cups 720–960 ml whole milk
  • 1/2 teaspoon salt or to taste
  • 1 teaspoon black pepper freshly ground, or to taste

Instructions
 

  • In a large skillet, cook sausage over medium heat until browned and crumbled.
  • Sprinkle flour over sausage, stirring to coat evenly. Cook 1–2 minutes.
  • Slowly add milk while stirring constantly to avoid lumps.
  • Simmer until thickened, about 5–7 minutes.
  • Season with salt and pepper. Serve hot over biscuits.

Notes

Add a pinch of cayenne or red pepper flakes for heat.
For a richer version, use half-and-half instead of milk.
If the gravy thickens too much, stir in a splash of milk before serving.
