- 1 whole chicken about 4 pounds
- 1 tablespoon olive oil
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon halved
- 1 bunch fresh thyme or rosemary optional
- 1/2 cup chicken broth for roasting
Preheat the oven to 375°F (190°C).
Remove giblets from the chicken, pat it dry with paper towels.
Rub olive oil over the chicken and season with garlic powder, onion powder, paprika, thyme, salt, and pepper.
Stuff the cavity of the chicken with halved lemon and fresh herbs (optional).
Place the chicken on a roasting rack in a baking dish. Pour chicken broth into the bottom of the dish to keep the chicken moist while roasting.
Roast the chicken for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
Let the chicken rest for 10 minutes before carving to allow juices to redistribute.
For extra crispy skin, make sure to dry the chicken thoroughly before seasoning.
You can adjust the seasoning to your taste by adding more or less of your preferred herbs and spices.
