Rolo Ritz Cookies

Rolo Ritz Cookies are a quick and irresistible no-bake treat made with buttery Ritz crackers, gooey Rolo candies, and melted chocolate. Sweet, salty, and done in just 15 minutes!

Ingredients
  

  • 48 Ritz crackers
  • 24 Rolo candies unwrapped
  • 1½ cups melted chocolate semi-sweet or milk
  • Flaky sea salt optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
  • Place 24 Ritz crackers (salted side down) on the baking sheet.
  • Top each cracker with a Rolo candy.
  • Bake for 3–5 minutes until the Rolos soften (but don’t fully melt).
  • Remove from oven and press another cracker (salted side up) on top of each to make a sandwich.
  • Let cool or refrigerate for 10 minutes until set.
  • Dip the cookies halfway or fully in melted chocolate.
  • Optional: Sprinkle sea salt on top while chocolate is still wet.
  • Let chocolate harden before serving or storing.

Notes

Use dark or white chocolate for variety.
Great for gifting or party trays.
Store in an airtight container at room temp for up to 1 week or freeze for 2 months.
