Ingredients
  

  • 1 bunch radishes sliced
  • 1 cup cucumber diced
  • 0.5 cup parsley chopped
  • 2 tablespoons olive oil
  • 1 tablespoon vinegar white or apple cider
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste

Instructions
 

  • Wash and slice the radishes into thin rounds.
  • Chop the cucumber and fresh parsley.
  • In a large bowl, combine radishes, cucumber, and parsley.
  • In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
  • Drizzle the dressing over the salad, toss gently, and serve immediately.

Notes

Best enjoyed fresh. Can be stored in the fridge for up to 2 days.
