Ingredients
  

  • 2 3-oz. packages dry ramen noodles
  • 2 Tbsp. cornstarch
  • 2 Tbsp. water
  • 1 cup water
  • 6 Tbsp. soy sauce
  • 2 Tbsp. maple syrup
  • 2 Tbsp. rice vinegar
  • 1 Tbsp. avocado oil
  • 0.5 Tbsp. sriracha
  • 1/4 tsp. crushed red pepper flakes
  • 2 cloves garlic minced
  • chopped scallions for garnish
  • sesame seeds for garnish

Instructions
 

  • Open the ramen packages and set aside the seasoning packets.
  • Combine the cornstarch and water in a small bowl; mix well and set aside.
  • Bring a small pot to medium heat, add soy sauce, maple syrup, rice vinegar, avocado oil, sriracha, and crushed red pepper flakes. Whisk and let it boil.
  • Reduce the heat to low, then add the cornstarch mixture. Stir until the sauce thickens and coats the spoon, then set aside.
  • In a separate pot, bring 6 cups of water to a boil. Add ramen noodles and cook for 2 minutes until slightly firm.
  • Drain the noodles and return them to the pot. Pour the sauce over the noodles and mix to coat completely.
  • Heat on medium-high for another 3 minutes until the sauce is somewhat absorbed.
  • Serve with a sprinkle of scallions and sesame seeds.

Notes

Taste test your sauce before adding it to the noodles, so you can adjust the seasoning to your liking. Feel free to add more sriracha for an extra kick.
