Ingredients

  • 4 burrito-size tortillas 12-inch, white, soft
  • 4 spinach-herb tortilla wraps 12-inch, green
  • 2 ounce blocks of cream cheese softened to room temperature
  • 1/2 cup mayonnaise
  • 4 tablespoons Hidden Valley Ranch seasoning or 2 packets
  • 1 pound cooked crispy bacon finely crumbled
  • 8 slices Havarti cheese
  • 8 slices Colby Jack cheese
  • 1 pound deli chicken breast thinly-sliced
  • 1 pound deli baked ham or pastrami thinly-sliced
  • 16 large slices deli salami or 32 slices small salami
  • 2 cups baby spinach leaves
  • 8 leaves butter lettuce

Instructions

  • Cut the softened blocks of cream cheese into chunks. Add to a large mixing bowl and beat until smooth and fluffy. Add mayo and ranch seasoning, mixing to combine. Fold in bacon bits with a spatula.
  • Lay out the 4 green tortilla wraps. Divide half the cream cheese mixture and spread it out, leaving a 1-inch border.
  • Arrange thin slices of deli chicken, Colby Jack cheese, and 4 slices of salami over the spread. Spread ingredients, don’t stack.
  • On the bottom half, arrange 1/4 cup of baby spinach leaves.
  • Lay out the 4 white flour tortillas and divide the remaining cream cheese mixture, spreading it evenly, leaving a 1-inch border.
  • Arrange ham, Havarti cheese, and 4 slices of salami over the mixture.
  • Place butter lettuce on the bottom half of each tortilla.
  • Roll each tortilla tightly from the bottom into a log shape. Slice the log into 8 pinwheel sandwiches with a sharp knife. Secure with a pick if desired.
