Ingredients
  

  • 1 5–6 lb prime rib roast, bone-in or boneless
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 3 tablespoons olive oil or softened butter
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions
 

  • Preheat oven to 450°F (230°C).
  • Pat the prime rib dry with paper towels.
  • Rub the roast with olive oil or butter, minced garlic, rosemary, thyme, salt, and pepper.
  • Place roast bone-side down in a roasting pan.
  • Roast at high heat for 15 minutes to sear.
  • Lower oven temperature to 325°F (165°C) and continue roasting until internal temperature reaches 120°F (rare) or 130°F (medium-rare).
  • Remove from oven and tent loosely with foil. Rest for 20–30 minutes.
  • Slice and serve immediately.

Notes

Always use a meat thermometer for accurate doneness.
Letting the roast rest keeps it juicy and tender.
Adjust cooking time based on roast size.
