Ingredients
  

  • - 4 flour tortillas
  • - 1 cup shredded mozzarella cheese
  • - ½ cup pizza sauce plus more for dipping
  • - 20–24 slices pepperoni
  • - 1 tsp Italian seasoning
  • - 1 tbsp olive oil or butter
  • - Optional: parsley red pepper flakes

Instructions
 

  • Heat a nonstick skillet over medium heat and lightly coat with olive oil or butter.
  • Lay one tortilla on a flat surface. Spread with a thin layer of pizza sauce.
  • Add shredded mozzarella, layer with pepperoni, and sprinkle Italian seasoning.
  • Top with another tortilla and gently press together.
  • Place in skillet and cook 2–3 minutes per side, until golden brown and cheese is melted.
  • Remove, let cool slightly, slice into wedges, and serve with extra sauce for dipping.

Notes

Use low-moisture mozzarella for the best melt and texture.
- Add your favorite toppings like mushrooms or peppers for variety.
- For extra crispness, press the quesadilla gently while cooking.
