Ingredients
  

  • Beef: 500g sirloin, flank, or ribeye, thinly sliced
  • Bell Peppers: 1 red 1 green, and 1 yellow, julienned
  • Onion: 1 medium sliced
  • Garlic: 3 cloves minced
  • Ginger: 1-inch piece minced
  • Soy Sauce: 3 tablespoons
  • Oyster Sauce: 2 tablespoons
  • Cornstarch: 1 tablespoon
  • Vegetable Oil: 2 tablespoons
  • Black Pepper: 1 teaspoon freshly ground
  • Water or Broth: 1/4 cup
  • Sugar: 1 teaspoon optional for balancing flavors
  • Optional Additions: Mushrooms snow peas, or scallions for garnish

Instructions
 

Prepare the Beef:

  • Thinly slice the beef against the grain. Marinate it in a mixture of 1 tablespoon soy sauce, 1/2 teaspoon black pepper, and cornstarch for 20 minutes.

Prep the Sauce:

  • In a small bowl, combine the remaining soy sauce, oyster sauce, sugar, and water. Stir until smooth.

Heat the Pan:

  • Use a wok or large skillet. Heat 1 tablespoon of oil over medium-high heat.

Cook the Beef:

  • Add the beef in batches, searing for 1–2 minutes per side. Remove and set aside.

Sauté Aromatics:

  • Add the remaining oil, then toss in garlic and ginger. Stir-fry for 30 seconds until fragrant.

Cook the Vegetables:

  • Add the bell peppers and onions. Stir-fry for 2–3 minutes until slightly tender but still crisp.

Combine Everything:

  • Return the beef to the pan. Pour in the sauce and toss to coat. Simmer for 2 minutes until the sauce thickens and the ingredients are well combined.

Finish with Black Pepper:

  • Sprinkle freshly ground black pepper to taste. Adjust seasonings as needed.

Serve Hot:

  • Pair with steamed rice, noodles, or your favorite sides. Garnish with scallions or sesame seeds if desired.

Notes

  • For extra spice, add red chili flakes or sliced fresh chilies.
  • To make it gluten-free, substitute soy sauce with tamari and check the oyster sauce for gluten content.
  • Adjust the sweetness by increasing or reducing sugar to suit your taste.
