  • 3 tablespoons natural peanut butter warmed briefly
  • 2 tablespoons honey or maple syrup adjust for sweetness
  • 1 teaspoon vanilla extract
  • 1 pinch kosher salt to enhance flavor

Instructions
 

  • Line mini muffin tin with paper liners or use a silicone mold.
  • Whisk together yogurt, peanut butter, honey, vanilla, and salt until smooth and glossy.
  • Spoon about 1 tablespoon of mixture into each cup, smoothing the tops.
  • Freeze for at least 2 hours or overnight until solid. Peel off liners and serve.

Notes

I learned that microwaving the peanut butter for 10 seconds makes swirling into the yogurt effortless.
For best texture, freeze the bites overnight rather than just a few hours.
