Ingredients
  

For the crust:

  • - 1 1/2 cups all-purpose flour
  • - 1/2 cup powdered sugar
  • - 3/4 cup unsalted butter cold and cubed

For the cream filling:

  • - 8 oz cream cheese softened
  • - 1 cup granulated sugar
  • - 1 large egg
  • - 1/2 cup sour cream
  • - 1 tsp vanilla extract

For the topping:

  • - 2–3 ripe peaches thinly sliced
  • - 1 tbsp sugar optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
  • In a bowl, combine flour and powdered sugar. Cut in butter until crumbly. Press into the pan and bake for 15 minutes. Let cool slightly.
  • Beat cream cheese until smooth. Add sugar, then mix in egg, sour cream, and vanilla until creamy.
  • Pour filling over the crust. Top with sliced peaches. Sprinkle with sugar if desired.
  • Bake for 25–30 minutes, or until center is set. Cool completely.
  • Chill for at least 2–3 hours. Slice into bars and serve cold.

Notes

- You can use canned or frozen peaches if fresh aren’t available.
- For cleaner slices, chill overnight before cutting.
- Add a dash of cinnamon or nutmeg for warmth.
