Ingredients
  

  • - 1½ cups diced peaches fresh, frozen, or canned
  • - ¼ cup brown sugar
  • - 1 tsp cinnamon
  • - ½ tsp nutmeg
  • - 1 tsp vanilla extract
  • - 2 tsp cornstarch + 1 tbsp water slurry
  • - 4 oz cream cheese softened
  • - 8–10 egg roll wrappers
  • - Water for sealing
  • - Oil for frying
  • - Powdered sugar optional, for dusting

Instructions
 

  • In a saucepan over medium heat, combine diced peaches, brown sugar, cinnamon, nutmeg, and vanilla. Stir and cook until bubbly.
  • Add the cornstarch slurry and cook 1–2 more minutes until the mixture thickens. Remove from heat and let it cool.
  • Lay an egg roll wrapper in a diamond shape. Spread 1 tsp cream cheese in the center, then add 1–2 tbsp of the peach mixture.
  • Fold the bottom corner over the filling, then the sides, and roll tightly. Seal the edge with water.
  • Heat oil in a skillet to 350°F (175°C). Fry egg rolls in batches for 2–3 minutes per side until golden and crispy.
  • Drain on paper towels and dust with powdered sugar. Serve warm, optionally with ice cream.

Notes

You can use canned peaches, but drain them well to prevent a soggy filling. For a lighter version, use an air fryer at 375°F for 8–10 minutes, flipping halfway.
