Ingredients
  

Sweet Potato Mixture

  • 2 lb sweet potatoes peeled or unpeeled and cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 0.5 tsp kosher salt
  • 0.25 cup Parmesan cheese finely grated

Instructions
 

  • Preheat your air fryer to 400°F (200°C) for 5 minutes.
  • Peel (optional) and cut the sweet potatoes into 1-inch cubes. Pat them completely dry with a clean towel.
  • In a large bowl, toss the potato cubes with olive oil, Italian seasoning, garlic powder, and kosher salt until evenly coated.
  • Arrange the cubes in a single layer in the air fryer basket and cook for 15 minutes, shaking halfway through to ensure even browning.
  • Sprinkle the grated Parmesan cheese over the hot potatoes, then air fry for 2–3 more minutes until the edges are crisp and the cheese is lightly browned.
  • Carefully transfer to a serving dish and enjoy immediately while still hot.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat at 375°F for 5–7 minutes to restore crisp edges.
If freezing, flash-freeze cooled cubes on a tray before bagging, then thaw overnight in the fridge before reheating.
