Instructions
Preheat your oven to 425°F (220°C).
In a large bowl, toss carrots with olive oil, garlic, salt, and pepper until evenly coated.
Spread the carrots on a baking sheet in a single layer.
Bake for 20-25 minutes until tender and golden, flipping halfway through.
Remove from oven and sprinkle with Parmesan while still hot.
