Ingredients
  

  • 2 cups onion sliced
  • 3 cloves garlic minced
  • 1 cup Gruyère cheese shredded
  • 2 cups broth vegetable or beef
  • 8 ounces pasta any shape
  • 1 teaspoon thyme dried
  • 2 tablespoons olive oil

Instructions
 

  • Heat olive oil in a large pot over medium heat, then add sliced onions and sauté until caramelized, about 15-20 minutes, stirring frequently.
  • Add minced garlic and thyme, cooking until fragrant, about 1 minute.
  • Pour in broth and bring to a gentle boil. Stir in the uncooked pasta and lower the heat, cooking until the pasta is al dente, about 10 minutes.
  • Once cooked, mix in the Gruyère cheese until melted and creamy, and serve immediately with a sprinkle of fresh parsley.
