One Pot Creamy Cajun Sausage Pasta

Ingredients
  

  • 10 ounces smoked sausage Andouille or kielbasa
  • 4 ounces pasta penne or rigatoni
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup bell peppers diced, mixed colors
  • 1/2 cup onion diced
  • 2 cups low-sodium chicken broth add more if needed
  • 1 cup heavy cream
  • 1 cup Parmesan cheese shredded
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper optional, for extra spice
  • 1 cup fresh spinach optional
  • parsley chopped for garnish

Instructions
 

  • In a large pot, heat olive oil over medium heat and add diced sausage. Sauté until browned and fragrant, about 5 minutes.
  • Add onion and bell peppers to the pot. Cook until soft, about 3-4 minutes.
  • Stir in pasta, Cajun seasoning, garlic powder, low-sodium chicken broth, and cayenne pepper if desired. Simmer, stirring occasionally, until pasta is al dente and liquid is reduced, about 10 minutes.
  • Add in heavy cream and Parmesan cheese. Simmer for another 2-3 minutes until creamy. Stir in fresh spinach if using.
  • Garnish with parsley before serving.
