Ingredients
  

  • 1 lb boneless skinless chicken breast, cubed
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 small yellow onion diced
  • 1 bell pepper any color, diced
  • 3 cloves garlic minced
  • 1 can 14.5 oz fire-roasted diced tomatoes
  • 2 cups chicken broth
  • ½ lb penne pasta uncooked
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 green onions chopped (for garnish)

Instructions
 

  • Season chicken with Cajun seasoning.
  • Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Remove and set aside.
  • In the same skillet, sauté onions and bell pepper for 3–4 minutes until soft. Add garlic and cook for 30 seconds.
  • Add tomatoes and chicken broth. Stir in uncooked pasta. Bring to a boil, then reduce heat and simmer uncovered for 10–12 minutes, stirring occasionally.
  • When pasta is tender and most liquid is absorbed, stir in heavy cream and Parmesan cheese. Return cooked chicken to the pan.
  • Simmer for 2–3 minutes until creamy. Top with green onions and serve hot.

Notes

Adjust spice level by reducing Cajun seasoning or using a mild blend.
Add veggies like spinach or mushrooms for extra nutrition.
Use pre-cooked chicken to save time.
