Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Remove and set aside.
In the same skillet, sauté onions and bell pepper for 3–4 minutes until soft. Add garlic and cook for 30 seconds.
Add tomatoes and chicken broth. Stir in uncooked pasta. Bring to a boil, then reduce heat and simmer uncovered for 10–12 minutes, stirring occasionally.
When pasta is tender and most liquid is absorbed, stir in heavy cream and Parmesan cheese. Return cooked chicken to the pan.
Simmer for 2–3 minutes until creamy. Top with green onions and serve hot.
