Ingredients
  

  • 4 pieces chicken breasts boneless
  • 1 bunch asparagus trimmed
  • 1.5 pounds new potatoes halved
  • 4 tablespoons butter melted
  • 1 lemon juice freshly squeezed
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions
 

  • Preheat the oven to 400°F (200°C). Toss your chicken with salt and pepper, and arrange it on a baking sheet.
  • Lay asparagus and halved new potatoes around the chicken, drizzling everything with melted butter.
  • Roast for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the veggies are tender.
  • Serve the chicken with a squeeze of fresh lemon juice for brightness, arranging the vegetables artfully on the plate.
