Ingredients
  

For the crust:

  • 1 cup graham cracker crumbs
  • 2 tbsp sugar
  • 4 tbsp unsalted butter melted

For the filling:

  • 8 oz cream cheese softened
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

For the peach topping:

  • 2 cups fresh peaches peeled & diced
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch optional, for thickening

Instructions
 

  • In a bowl, combine graham crumbs, sugar, and melted butter. Press into the bottom of jars.
  • Beat cream cheese until smooth. Add sugar and vanilla; mix well.
  • Whip the heavy cream until stiff peaks form. Fold into the cream cheese mixture.
  • In a saucepan, cook diced peaches, sugar, and lemon juice for 5–8 minutes. Add cornstarch if using. Let cool.
  • Spoon filling over crust, top with peach mixture.
  • Chill jars for at least 2 hours before serving.

Notes

You can substitute canned peaches if fresh are unavailable. For extra flavor, sprinkle a pinch of cinnamon into the peach topping.
