Ingredients
  

  • 2 cups granulated sugar
  • 1/2 cup unsalted butter
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup creamy peanut butter optional
  • 3 cups quick oats
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Line a baking sheet with parchment paper.
  • In a medium saucepan, combine sugar, butter, milk, cocoa, and salt.
  • Bring to a boil over medium heat. Let boil for 1–2 minutes, stirring constantly.
  • Remove from heat. Stir in peanut butter (if using) and vanilla until smooth.
  • Add oats and mix until fully coated.
  • Drop spoonfuls of mixture onto prepared baking sheet.
  • Let cookies cool at room temperature until set (about 30 minutes).

Notes

For softer cookies, reduce boiling time slightly. For firmer cookies, let boil a little longer.
Quick oats work best, but old-fashioned oats can be used for a chewier texture.
Store cookies in an airtight container for up to 5 days, or freeze for up to 3 months.
