- 2 cups granulated sugar
- 1/2 cup unsalted butter
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/2 cup creamy peanut butter optional
- 3 cups quick oats
- 1 tsp vanilla extract
- Pinch of salt
Line a baking sheet with parchment paper.
In a medium saucepan, combine sugar, butter, milk, cocoa, and salt.
Bring to a boil over medium heat. Let boil for 1–2 minutes, stirring constantly.
Remove from heat. Stir in peanut butter (if using) and vanilla until smooth.
Add oats and mix until fully coated.
Drop spoonfuls of mixture onto prepared baking sheet.
Let cookies cool at room temperature until set (about 30 minutes).
For softer cookies, reduce boiling time slightly. For firmer cookies, let boil a little longer.
Quick oats work best, but old-fashioned oats can be used for a chewier texture.
Store cookies in an airtight container for up to 5 days, or freeze for up to 3 months.
