Soak the pitted dates in ½ cup of hot water for 10 minutes, then drain well.

Combine drained dates, almonds, cocoa powder, chia seeds, and sea salt in a food processor.

Pulse for 1 minute until the mixture looks coarse with visible nut bits, then scrape down the sides.
Process for 2 more minutes until the mixture clumps and feels silky smooth.
Roll heaping tablespoons of the mixture into balls and arrange them on a tray.
Chill in the refrigerator for 30 minutes before serving.
