Ingredients
  

Energy Ball Mixture

  • 1 cup pitted dates
  • 0.5 cup raw almonds
  • 1 tbsp unsweetened cocoa powder
  • 2 tbsp chia seeds
  • 0.25 tsp sea salt

  • Soak the pitted dates in ½ cup of hot water for 10 minutes, then drain well.

  • Combine drained dates, almonds, cocoa powder, chia seeds, and sea salt in a food processor.
    1 cup pitted dates, 0.5 cup raw almonds, 1 tbsp unsweetened cocoa powder, 2 tbsp chia seeds, 0.25 tsp sea salt
  • Pulse for 1 minute until the mixture looks coarse with visible nut bits, then scrape down the sides.
  • Process for 2 more minutes until the mixture clumps and feels silky smooth.
  • Roll heaping tablespoons of the mixture into balls and arrange them on a tray.
  • Chill in the refrigerator for 30 minutes before serving.

Notes

These energy balls keep at room temperature for up to 2 days before they start to dry out. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months. Thaw frozen bites in the fridge for about an hour before serving.
