Ingredients
  

  • 1.5 pounds carrots peeled and halved lengthwise
  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon dried thyme
  • kosher salt and freshly ground black pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a large bowl, whisk together olive oil, maple syrup, Dijon mustard, dried thyme, salt, and pepper.
  • Add carrots and toss until evenly coated.
  • Arrange carrots cut-side down on a parchment-lined baking sheet in a single layer.
  • Roast for 30 minutes, flipping halfway, until carrots are tender and golden brown.

Notes

Use fresh thyme leaves in place of dried for a brighter herbal note.
Store any leftovers in an airtight container in the refrigerator for up to 4 days; reheat at 350°F for 8–10 minutes.
