Instructions
Preheat oven to 400°F (200°C).
In a large bowl, whisk together olive oil, maple syrup, Dijon mustard, dried thyme, salt, and pepper.
Add carrots and toss until evenly coated.
Arrange carrots cut-side down on a parchment-lined baking sheet in a single layer.
Roast for 30 minutes, flipping halfway, until carrots are tender and golden brown.
Notes
Use fresh thyme leaves in place of dried for a brighter herbal note.Store any leftovers in an airtight container in the refrigerator for up to 4 days; reheat at 350°F for 8–10 minutes.
