  • 3 cups cooked chicken diced
  • 2 cups cooked rice
  • 1 cup barbecue sauce
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup corn
  • 1/4 cup green onions sliced
  • 1/2 tsp garlic powder
  • black pepper to taste

Instructions
 

  • Begin by preheating your oven to 350°F. Prepare a 9x13-inch baking dish with a light coat of oil to prevent sticking.
  • In a large mixing bowl, combine the barbecue sauce, garlic powder, and a dash of black pepper. Stir until smooth.
  • Gently fold in the diced chicken, cooked rice, tomatoes, corn, and sliced green onions, along with half of each type of cheese, until well blended.
  • Transfer the mixture into the greased dish, spreading it out evenly for a consistent bake.
  • Top with the remaining Monterey Jack and cheddar cheese, ensuring it’s covered for that melty goodness.
  • Bake in the heated oven for 25 to 30 minutes, or until the casserole is hot and the cheese has melted beautifully.
  • For serving, feel free to add fresh cilantro, jalapeños, or a drizzle of ranch dressing for an extra pop of flavor.

Notes
